A one-skillet wonder made with juicy chicken, fluffy rice, and melted cheddar. Perfect for busy nights or meal prep.
Ingredients
2 cups cooked rice
1 lb chicken breast or thighs, diced
1 cup shredded cheddar cheese
1 small onion, chopped
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp pepper
1 tsp paprika
1/2 cup chicken broth
1 tbsp olive oil
Chopped parsley for garnish
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add diced chicken and cook until browned.
3. Stir in onion and garlic; cook until softened.
4. Add cooked rice, chicken broth, salt, pepper, and paprika.
5. Mix in shredded cheese and stir until melted.
6. Garnish with parsley and serve warm.
Notes
Use rotisserie chicken to save time.
Add peas or spinach for extra veggies.
Substitute brown rice or quinoa if preferred.
